I loved stuff peppers. I have got a little venison sausage in the bottom of the freezer, going to have to try this recipe. John have you ever tried blanching the peppers before stuffing them? After cutting the tops off, we always blanch them for +/- 5 minutes in boiling water before stuffing them. We usually only have to bake them for +/- 45 minutre with no need to baste.

Never tried that. What does it do? Soften them?

It does soften them up a bit to be sure and I believe helps release the flavor of the pepper into the stuffing quicker, it was an old recipe we found some time back. I bake them in a banana bread dish (keeps them from rolling over) and keep a little bit of water in the bottom as well so there is no burning/sticking
