After my first hog trip last week, I had a pretty good meal with some hog placed in the crock pot with saurkraut. It was a little dry at first but after sitting over night, it was excellent. My buddy did some ribs and they turned out pretty chewy. Whats the best way to prep hog meat etc for cooking? Is it better to marinate first or something?

Seer them on a high heat grill then reduce heat to 250-275 ( i use a smoker) Cook for 3 hours and remove. Wrap them in tin foil twice with BBQ sauce in with them and cook for 2 more hours. Unwrap and cook for one more hour. At this point be careful cause they will fall to pieces when you try to remove them from the grill. You'll have people fighting over them trust me!
