I was talking with trapper dan the other day about how he processes his hogs, and got to talking about sausage and such. He mentioned that he uses Legg seasoning in his sausage and really liked it (trapper dan, let me know if I got this wrong!).

Anyway, I wasn't familiar with Legg products (except for the pantyhose, my sisters wore them) so I looked them up, anticipating a need for their products after this weekend when I plan to get a hog. The website I found is http://www.bestsouthernseasonings.com/main.sc and they have a good variety of spices, marinades, cures, rubs, etc. They even sell in bulk to deer and hog processors, so guys like iluv2hunt and johnl who both kill 20 or 30 hogs a year can save a buck or 2! 😀

I want to make some loose sausage, probably Italian and some breakfast, and also cure a ham like iluv2hunt did. The prices on the Legg stuff look reasonable, so I'll probably order a batch from them and see how it goes.

Does anyone else have a place to recommend for buying seasonings? Or, if you just blend your own, share a recipe or two. I'm sure I'll end up tweaking the packaged spices a bit, kicking it up a notch or two where needed. Might even eventually come up with my own blends, but for starters the pre-packaged spices seem like a good way to go.

They sell the Legg seasoning in the little store in Steinhatchee. It comes in a bag mixed to season 25# of meat
Ive used it plenty of times, but I usually have to tweak it just a bit. Very good though

Our family has used the Legg's seasoning both commercially and privately for many years. It was used in my wife's dads custom kill operation for many years to season both wild and pen raised pork sausage. I use it for my venison that is mixed with boston butts to make smoked sausage. Usually add cayanne, sage and "cure"(prague powder/sodium nitrite) Several of the country grocery stores sell the Legg seasoning in our neck of the woods.
