I brew wine, beer and mead (wine made from Honey), its not hard, you just need the proper equipment. Wine is easy if you the juice already, if not well you gotta smash them up and extrat the juice(the hard part) after that a CLEAN & Sterilized 8 gal pickle bucket and Lid with an airlock, and a good WINE yeast. PLEASE do not use bread yeast, you will hate the taste, trust me! there are local homebrew shops all over the state, get on the web and google up a few in your area.
Most have some kind of class or instruction to help you along your way.
Mead is the easiest to brew, as the Honey is already in a liquid form, just add water, and yeast(again use a wine or champagne brewing yeast, yes you can even use a beer ale yeast, but it wont be real strong)
Beer is the hardest of the 3 as it requires boiling to extract the flavor from the Hops. And then cooling so you can pitch the yeast.
Per the Federal laws you are allowed to make up to 100 gallons of wine or beer per year, per legal 21 year old in your household.
With a max of 200 gallons per household per calendar year
I never have used the "yeast method" I have always just used berries (fruit) water and bunches of sugar.....and butt loads of time..cheese cloth for straining and more sugar....gets some dandy results that way....5 gallon crock or glass jar 3/4 full of mashed berries 7# of sugar and just enough water to come to the top of the berries..cover with cheese cloth and put in a dark somewhat cooler spot and let it work..takes a couple of weeks before you can remove the berries the liquid level should be quadruple that of barries...strain about a cup and check it with a hydrometer 14 to 20% (hydrometer and beaker can be had at most hobby or science shops) They have most all you need in those beer and wine kits you find online....
You can now either strain the batch and bottle or add 2-3# more sugar and continue the process or you can add more berries and sugar, to enrich the fullness...all the yeast does is speed up the process of fermentation and prevents it from turning to vinegar later on.... I've heard it has a better flavor from the fruit as well, but don't know first hand.
