Yesterday I did 2 racks of store bought and my last pack of wild pork ribs. I gave them a good coat of Stubbs rub and then a heavy coat of good ole maple syrup.
I used to do ribs on the smoker, but it takes way too long and it is too dang hot to tend a smoker for hours. I learned to do it on the gas grill where they are just as good, and 1/3 the time. I crank the grill to med-med/hi heat, a and sear the ribs for about 7-8 minutes per side. Then I gave them a good lather down with Stubb's mippin sauce, and wrapped tight in aluminum foil. I placed all of them on the top rack on low heat for about 45min-1hour. Then unwrap, and throw back on the grill on med to crisp them up. At this time I added a good coat of moppin sauce.
