Does anyone know if any chain stores sell it? Like Winn Dixie/Publix?Wal mart, etc? I want to try a recipe for Canadian Bacon, and want to have it cured, smoked, and ready for Christmas but it calls for Morton's Tender quick. I have pink salt here on hand I can use, but want try this particular cure...

I did not find any Tender Quick at the local stores. I am going to order some later on. I had quite a bit of pink salt left. This afternoon I took some time to rearrange my meat freezer. Took out several backstraps from last year and what not roasts that needed to be used up sooner than later. Got my brine made and cooling down in the fridge, and the meat thawing. Tomorrow I will take them out and trim off fat, and into the brine for about a 72 hour soak, then will put on the egg and smoke till 140*. I'll then vacuum seal and that is what my close friends and family are getting for Christmas. I wish to heck I had more spare time this fall to make hot sauce. Still got about 20 lbs of peppers int eh freezer. I'll tackle that project later
