Hot sauce time

I figure as crazy as my life is right now I better knock out these projects while I got the time. Today I took out all my "green" peppers from the freezer and got a huge batch of sauce going now
Ill post pics later on. This batch will straight up light your colon on fire!!!

Started out tossing them on the egg for an hour with some hickory just to get a touch of smoke flavor

After an hour, I tossed them in a stock pot with olive oil, 2 white onions, a head of roasted garlic cloves, salt/pepper. I let them simmer for about 15 minutes.

Then started adding to blender to puree with enough vinegar to make it blend, then dumped back in the pot.
Then filled the pot up with vinegar slowly to the thickness I wanted(barely coat a spoon)

Let simmer for an hour, and tasted. While it was hot, I wasn't "blown away" with the balance of flavor AND heat...and was told last year my sauce was great, just not hot enough :cool2

I reached back in the freezer and pulled out 2 Bhut Jolokia peppers and added them to the sauce...Let simmer another 25 minutes and re-tasted

A trick an old hot sauce maker shared on one of the forums I visit..let it sit for 34-48hrs, then re heat and re blend before bottling up. It will straight up light you up now. I got mason jars to jar this stuff up in a couple days

Next up....Habanero sauce :rockon

What do you do with all that sauce....eat your cereal in it.........LOL.
