What is the best meat for smoking?
pork
venison
beef
goat
lamb
turkey
chicken
pheasant
cornish hen
salmon

blue fish

turkey and trout with hickory and apple wood (sweet and tangy). try some sour cream/dill/horseradish sauce on the fish,good stuff. shrimp is pretty good also. apple wood is a little hard to come by down here, don't really care for mesquite.

Sorry I guess I asked the question the wrong way, which part of the hog is best for smoking?

Butts(it is actually the shoulder, cut off with a band saw on each end) are my first choice, secondly are the ribs
The rest I use for frying, making sausage, or curing my own ham
