I see you are using that old vertical smoker again, did you figure how to keep the temps stable in that beast.

Yep. I put a turkey fryer burner in it and ran the hose out the bottom door. Then I used a pie tin full of lit charcoal and some apple wood chips for smoke. Worked perfectly

Light bread is what the old timers in the south called loaf bread, white or wheat. As you know corn bread is rather "heavy" in its' make up as compared to what we all call sliced bread from a loaf. My father-in-law who will be 90 this August, used to called store bought sliced loaf bread "wasp nest", because it was so light compared to the common corn bread or biscuits of the day.
