jerky time(again)

Nothing like a few pieces of venison jerky and a cup of coffee for breakfast.

Best batch of jerky I have ever done. I got it down to a science now

I have to say, that right there looks about damn near perfect. How did that last batch of peppers come out? I used the oven to dry mine out, perheps I left them in there a little too long. It was easier to make pepper powder than crushed flakes...lol

I guess they turned out great. I picked them off the dehydrator with my bare fingers and like a bumbling idiot, I crushed them w/o wearing a nitrile glove. I literally washed my hands 4 times. Sitting on the couch I rubbed my nose and have felt like I got pepper sprayed. My nose is on pure fire

My "super~hots" are producing now , so I really gotta be more careful or I can hurt myself with them. Ghost peppers and red Caribbeans are loaded

I cut my venison into strips about 1/2" thick just let it soak in teryaki sauce over night in a glass bowl. When I pull it out I lay it on a stack of paper towels in strips and pat it dry. Next I get my pepper mill and course grind some fresh cracked pepper on it before transferring it to the dehydrator. About 16hrs later it is perfect and usually doesn't last very long when all my kids come to visit. Man, just writing about it makes me want some now...I'm ready for this season. :eek
