We put the fillets in a ziploc and then fill the bag with water, getting as much air out as possible. When we want to eat them, take it out and let it sit in the sink for a few hours until it thaws but is still cool. When ready to fry, we soak it in ice water for a few minutes then put it in seasoned corn meal/flour and right in the hot oil. The cold water helps make the fillets crispier.

i ate the rest of mine the other day fried em up and had some grits and hush puppies with em'. thats good eatin right there

Did you bring any for the rest of us. :mrgreen: I'm thinking I need to make a trip for some grunt's and snapper soon.
