In order of favoriteness...

Pecan- pork
Hickory- pork
Citrus- pork/fish
Oak- will do if I don't have anything else, but it can't have the bark on.

I like the applewood/oak or the hickory/oak - 50/50 depending on what is cooking. I do have some aged citrus on the porch, love the flavor it puts on chicken.
