You gotta have good boudin when making gumbo and jambalaya. We used to live in Baton Rouge and go fishing down in the Atchafalaya Basin and there were a couple of places we'd stop and eat that were just pure Cajun. One was on a houseboat. Always got the gumbo, couldn't get my fill. The sausage in that stuff was so good, if you put it on your head your tongue would slap your brains out trying to get to it! :drool:
