Made some dirty rice with some pork sausage the other day. It's easy to make,I made it with yellow rice.Brown a pound or so of sausage,chop some onions,peppers,mushrooms and pretty much whatever you like.Cook the rice then add all the meat and simmer for awhile. Be careful what you add for seasonings and spices. If your sausage is spicy or salty lay off a little on what you add to the mix. You can also make it with Zatarain's mix,that's pretty good too. Also made some cuban pork with black beans and rice awhile back too.I kinda winged it and it came out awesome. I cubed a pork hind quarter and browned it,did the same thing I did with the rice added onion,shrooms,peppers, and a can of black beans. Season it how you like. Put a lid on it and let it simmer for a few hours. I ate it on a bed of yellow rice and put crystal hot sauce on it.
Forgot to say I usually put in some stewed maters or salsa,or both.
my buddy that does processing for me in Bartow, makes this sausage that is like your dirty rice but all the ingredents are stuffed into suasage casings. i forget what he calls it but it is very good.
