My guys fee on deer is $75. That is pulling up with the deer unskinned/ungutted in the back of your truck. That is anything you want done, (with the exception of smoked sausage being more). And it is all vacuum sealed
He cHARGED 45.00 A deer a few yrs ago and .30 cent a lb for hogs. LAst timer I used him I dropped off about 6 deer and I got entire hind quarters wrapped up and not cut. I was pretty pissed and aint been back since. Somehow his daughter was involved,before that I never had any problems with him.Hopefully he's on the right track again.

I've wrapped my own for years using freezer wrap,I usually double wrap it or at least roll it around the meat a few times. I've eaten meat that was well over a yr and it was fine.
In vacuum-packed Food Saver, with quality bags, it will last for up to 2 years (IF you keep it frozen below zero). Ziploc freezer bags, if you get all the air out, will last about a year, sometimes more. Ground beef with the meat cure in it will last over a year. If you don't get the air out, you'll be lucky to have it last 3 months before freezer burn starts. With waxed freezer paper, if you get the air out and wrap it tight and double, you'll get up to a year out of it before freezer burn starts. Biggest thing is to get all the fat off of the meat. It doesn't matter how well it's wrapped if there is fat/silver skin/talon on the meat, it will start to go rancid in the freezer. I find that the quart ziploc freezer bags work the best for ground meat if you fill the bag completely. The food saver is the best option, but also the most expensive.

He has a checklist for what you want done for each part of the animal. Can't answer for what he did way back when, he does a good job for us now
