Moneys tight so i just got after it today.. De Boned all the meat, and cut off all the silver skin.

Now that is what I need to learn to do...$100 processing fee sorta defeats the whole do it yourself idea! Congrats!

Looks good! I hop to be doing that before the month's out! I want to try curing a couple of hams. But my first one or two will probably end up at the processor there in town.
