Good gerber or Case with a gut hook(or a razor knife with the carpet hook blades)
Small hand saw, lopers, or sawz-all
sharpening steel

Just my 6" gerber and a pair of tree loppers. I usually bone ot the hams,filet out the back straps and sweetbreads, cut the shoulders, and filet off some of the neck and chuchk everything else. I use the loppers to cut the bone at the knee joints. Unless I get a good hog with some ribs then I sometimes use a saw.

have a gerber skinning knife w/ gut hook. that is it. don't use loppers or a bone saw. after disassembly will use a filet knife to de-bone with. that is about it for me.
