I thought the pro's scaulded and scraped them before processing?

Some do, the place I worked for was kinda small and skinned them so we didnt have to mess with it. The big commercial slaughter houses do scald them though SA. Its just a major PITA in my opinion.

Yep. Although hot water and Red Devil Lye work real well to scrape em down. But I prefer skinning the traditional way. Unless, of course, somebody can show me how I can get it done cleaner and faster.
