its so much easier hung from the neck. from what i have done.. i do it both ways.. just depends on what im doing.. if im bored or not. if i feel like just gettin r done i hang it by the neck. if i want to be "essence of emeril" i hang it by the legs and get fancy. No matter which way you do it. once you have done about 20 its just quicker. Practice makes perfect.
When you neck shoot everything like I do, hangin by the head is out!! You'll have a dirty mess when its head pulls off
I was never one to look for shortcuts and alot of the time I would start cleaning with the head down. free the anus, split the pelvic arch and remove genitals, then hang with the head up, so the guts and lungs etc just fall out from gravity and a little pulling. and +1 with the head/neck shot the body cavity comes out clean as a whistle, not a drop of blood. never had a head pull off though, end up cutting it off anyway then hang again neck down to drain any remaining blood.alot more work but in the end the result is nice.
anyone ever try one of those plastic a-hole corkscrew thingies?
