The real little guys 20-30 lbs on the hoof are tender and tasty. My bud asked, why did you skewer the 22 lbs pig " its more work than what is worth" I replied for dinner tonight your wife will love it. She did his wife must of commented 5 time on how good it was.
The scalding I would like to learn how to do that.

Fill up a turkey fryer with water and heat it till it's just under boiling point. Dip a pot of water and pour it over the hog. Use the back of an old butcher knife to scrape the hair out.
That's how we did a hog for a pig roast. Never did a wild one, but I'm sure it's the same thing...
