I've been out fishing the bridges in town several times this week and last. The catch for the last week or two has consisted of bluefish. Thats it, bluefish on almost every cast... Cant wait for things to change. Water in the river is still real cold for this time of year.

Big ole grouper will eat them too, if you butterfly 'em.

Bluefish are excellent smoked also. Split them down the back, butterflied. Cut out the blood line and season to your liking. You can smoke them real dry and it makes a killer smoked fish dip

+1, they are good smoked.....but I have trouble keeping them lit.

In all seriousness, I've had very few fish that you can't smoke and make taste good, especially if you put it in a bunch of fats like cream cheese and whatnot. Many of the little smoke houses will smoke your fish for a nominal fee or a portion of the resulting product.

I used to take loads of amberjack into a smokehouse on Ft. Myers Beach and they'd just estimate the resulting product based on weight and past results, and weigh out the stuff they already had smoked....I'd go on my happy way, and everyone's Christmas gift was covered.
