NachoGrande, If you go to www.youtube.com , you can see a very good detailed video on skinning and quartering Hog and Deer.
By the way, My Uncle makes the best Deer jerky.

the goal is to chill it but not let it freeze, once frozen you need to keep it frozen." the theory of " chilling it with the skin on is so that the meat doesn't dry out as much.thats how I was taught anyway. guess thats why the butchers up north have such strong hands. skinning a cold one is tough. I've never had the pleasure of trying to skin a frozen one
