the goal is to chill it but not let it freeze, once frozen you need to keep it frozen." the theory of " chilling it with the skin on is so that the meat doesn't dry out as much.thats how I was taught anyway. guess thats why the butchers up north have such strong hands. skinning a cold one is tough. I've never had the pleasure of trying to skin a frozen one
