I took a big freezer bag of venison from last year out today and made a simple pan style Italian sausage. By myself, it took 2 hours to make 22 pounds
Ingredients:
1 bag Legg's Italian seasoning
3/4 jar fennel seed
extra crushed red pepper
1 cup brown sugar
1 bunch parsley from my little garden
3 heads garlic
1 block Parmesan cheese
2 cups red wine
I cubed all the meat up, aded ingredients, mixed in a large tupperware storage bin
Ground a bit, fried a test piece, reseasoned and ground it all up
Put in 1 lb bags and in the freezer
this is good stuff for chili, spaghetti, biscuits & gravy, or sausage biscuits
