Ok man, you live right up the road from me in Lutz...don't make me come over there! Is that homemade sausage? I normally make mine loose without the skins cause I can't find a good source without having them mailed. If you made those at home where do you get your casings around here? I live in Northdale.
I do all my own processing. However, I have found it is as cheap and less hassle to get a processor to do anything in casings. The price of casings are ridiculous. I cannot find fresh ones around town here. I tried Winn Dixie and Publix and they wouldn't sell me any. The last time I did any I ordered them and they came packed in packing salt. This batch of sausage was from 2 seasons ago. Just trying to get rid of some stuff. I still got a ton of meat left from last season. Ill wrap it up and re-freeze for later consumption. There was a guy in Land O lakes(close to Harry's bbq) that was doing processing. He did it for me. One day he was up and gone, out of business. There is another guy in LOL off of Ehren cutoff that is doing processing. Never been but a lot of my friends use him
