1 leg of venison :bbq
water
all spice
bay leaves
cinnamon
chili powder
coriander
cumin
garlic
oregano
paprika
parsley
sugar 1/2 cup white and 1/2 cup brown
debone and trim leg. brine in water, spices, and white sugar 24 hours turning once. drain brine, dry meat with paper towels, reseason using 1/2 cup of brown sugar and fresh spices to make a rub. place meat in an aluminum foil boat and seal tightly. cook over fire of some kind slow and low 250 degrees for 5 to 6 hours. pull off fire, drain juices from boat put on cutting board and pull, chop, slice, whichever you prefer. serve with your favorite bbq sides, sauce is optional.
I just threw this together for some friends that were coming over, and i had never cooked venison before. this big ham was a gift from a friend off a georgia deer that was about 2yrs old. my friends hadnt had venison in years, and their son never. it was a success, 7 lbs of cooked meat for 5 people and i only had 1 pound left, and i was behaving in front of company or i would have eaten that other pound. sorry no pics guys, but this was better than any bbq i have had.
