Well my plants have been still producing like rabbits up until now. This morning was the coldest of the year, and all my plants were pretty ugly this morning. So I went outside and clipped off every pepper still on the bushes. Ive been picking them off about once a week, vacuum sealing, and freezing for a massive hot sauce project later when I get time. I had enough from this mornings picking for a trial run. I think I have the recipe down pat.
Anyone that knows me, knows I do not like to use recipes and I sorta eyeball measurements, and adjust as necessary. Here is the best I can do
Picked all peppers off bushes to make about 1/2 blender full of coarse chopped peppers(Cayenne, jalapeño, Thai sun peppers, Tabasco's, Anaheim, and Thai dragons are what I have left growing). All these were green.
1/4 of a large red onion
4 large cloves fresh peeled garlic
1tbsp sea salt
t tsp fresh black pepper
1 tbsp pure cane sugar
1 bottle red wine vinegar
Put everything in blender until liquefied. Taste with a spoon and adjust seasonings as needed.
I think I got this about right. It is not real super hot, but has an "afterbite" that sneaks up on you. My mouth is numb at the moment from tasting it, so I am going to let it sit overnight and taste it again in the morning. I might go ahead and take all the rest of the peppers out of the freezer and make a huge batch and send out as gifts

aren't you suppose to let it set for like a year? thats what they do with the tabasco,grind peppers and put in woodeb barrels put on lid and cover the top with salt or some thing like that...............just sayin.
I'm not a hot sause guy or a spelling bee champ sorry guys, but its cool to make your own stuff, thats what I do. I'm going to try and pickle my own okraand pickles. I make some purty good jery also. Good luck enjoy hearing your results.
I thought the same thing.I seen how they make hot sauce on one of them how's it made shows. I think they age it for several years.
I make homemade salsa and eat it right away, no preservatives and it will go bad quickly.
