man you are makin me hungry. try smoking with hickory and applewood together, good stuff. looks like you got it down to a science. the jerky & pepperoni is my fav and good to bring in the woods.

Man your a reel pro. I inherited my father in laws stuffe and own my own grinder. I've made some summer sausage with him a few times and some smoked country pork sausage. I also have his recipe book.Hopefully I'll get some spare time to try amd make something. I love doing it just hardly have time anymore.
