Grilled King Mackerel

I grilled some fresh King Mackerel fillets on Monday and they turned out most excellent so I thought I'd share what I did. Sorry, I didn't think to get any pictures of the finished product. They were gone pretty quickly once I put them on the table for the family. I found the recipe online so it's not my own but it's worth sharing.

Grilled King Mackerel

4 - 6 King Makerel Fillets

1/4 cup each of:

A-1 Sauce
Worchisire Sauce
Soy Sauce (I used the light)

1 Tblsp Minced Garlic (the kind in the jar)

Combine all ingredients in a mixing bowel and mix well. Place fillets in a glass or metal dish and cover with the mix. Let it sit covered in the refridgerator for about 2hrs. Be sure that all sides are covered in the sauce. After two hours place on a hot grill for about 12-15 minutes turning as needed. You won't need to put aluminum foil on the grill because the meat is dense so it won't fall through. Just remove it when it flakes. The marinade caramelized nice on the fish and looks amazing. Serve with fench fries, garlic bread and ice cold sweet tea.

Here's the recipe I normally use:

4-6 King Mackerel Fillets
1 cup of mayonaise
Everglades Seasoning
olive oil

Cover fillets with mayonaise and sprinkle Everglade seasoning liberally on both sides. Place aluminum foil on a hot grill and poke holes in it. Spread olive oil on foil and place the fillets on the foil. Cook for about 15 minutes turning as needed. (Option: sometimes I make a little foil tray and put some hickory chips in it and place it on the side of the grill I'm not using with the burner turned on high until the chips start smoking. It gives the fish a slight smokey flavor that's awesome with the Everglades seasoning.) This ones good served with rice and a salad. Makes you feel all healthy.

I'll have to try that some time!

Marinate them in zesty italian dressing, maybe add a little Dale's to it, and they come out mighty fine as well!

When I grill fish I do something real simple..

Rub filet in olive oil
Sprinkle with Lemon/pepper seasoning
Finely sliced onions on top
Fresh black pepper
Maybe a sprinkle of dill

ok i steak king with a meat only saw saw. 1 1/2 inch thick.
Roll fish in olive oil season with lemon herb and Cajun seasoning grill slowly and re coat when you flip the fish this keeps it moist.

I also like to cover it with onion relish when it done.
