I have some bacon with.Brown sugar
maple syrup
molasses
honeywill see which taste best. I have a feeling the strong molasses flavor will do the best on wild bacon.
Going to lightly freeze tomorrow morning then slice and fry some of each.

By the way cook at lower temp-- has a higher sugar content and will turn black like it burnt easy. But man is it good.
Cool. I'd like to try and smoke some. Do you put the pork in a vinegar bath with ice after you quarter it up? I've heard if you do that right away it will take away the wild gamey taste.
I have not done the vinegar and salt. I do the ice water soak for days. But i will try the vinegar. Salting (and don't worry about to much) kills bacteria and starts to cure. Have not tried it yet.
