BTW, 5 pounds is a ton of meat. Depending on how many you are cooking for, I would break it down and re-freeze in smaller packs.

I have not tried making ground gator yet. You can make gumbo with it. Stir fry Use a chicken recipe and substitute gator in the stir fry.
I will probably have more recipys after next year. This year was my first year with my own tags. Next year i hope to get at least 6-8 tags
I ended up defrosting one of the 5 lb boxes on Friday and set about Saturday morning to try some gator jerky. After opening the package I found that the meat had been tenderized, it all looked like cubed steak. I was paranoid about leaving any fat or gristle/sinew in the meat so after doing my best to trim it up, I was left with about 3.5 lb of meat for the marinade. Let it set for 24 hours, sent the wife to the store for a dehydrator and got everything going Sunday afternoon. I like it, brought a bag into work and handed some out, so far the reviews have been great. I might end up using the other 5 lb package for jerky as well.
