I just picked up 10 lbs of gator (two 5 lb boxes) from a friend over the weekend. I am looking for some of your favorite ways to prepare/cook this. I understand the meat needs to be cleaned up a little based upon another friend who has already fried some of it up. I would like to defrost one box for this weekend and give it a shot.

and Honey- spicy mustard or possibly horseradish cocktail sauce. I like to cook gator and cat fish nuggets.
I have seen mention of people soaking the meat in milk or a little white vinegar before breading, anyone do this?
While I'm sure there IS gamy gator, I've never personally tasted one that needed milk, and I think the meat is too delicate tasting for vinegar or mojo.
The last gator meat I got was tail meat, and had been run thru a cuber(was from a processor in Palatka).
Make sure you get ALL the fat off of it. Gator fat is the nastiest stuff in the world taste wise and will ruin a batch of gator
