Spanish Collard green soup
I know this is not the authentic recipe. This is just the way I do it and my family devours it. An absolute wonderful winter time meal.~~~~
1 bunch collard greens. De-stemmed and cut into bite size pieces
1 can Great Northern beans or any white beans
1 can diced potatoes
1 small onion diced small
1 box chicken stock
1 packet Sazon Spanish seasoning
1 lb smoked sausage or chorrizzo's
Simmer greens, onion, sausage, and seasoning in chicken stock until they cook down. Add potatoes and beans. Simmer all together for 1 hour
Serve with hot pepper vinegar and cast iron made corn bread
looks mighty fine. I saw a lady buying collards yesterday and was tempted, but ended up making chopped liver for a Christmas eve party instead. oye ve, meat on Christmas eve, what was I thinking. I should be doing the dinner of the 3 fishes on that night. if the guys at the sons of Italy in N.Y. found out I'd have my legs broke.

That looks pretty d#@n good right there. Unfortunately I'm the only one at home that eats collards so I'll have to put this together at camp sometime. The boys at camp will thank you. :toast
