Saved a whole hind quarter and was thinking of putting it on the grill. It's gas and i was only gonna turn on one side and put some wood chips in the grills smoker box.
Any tips?

Wrap it in tin foil,if you like dust it good with shake-n-bake bbq,cook it slow around 300

For smoking temp smoke at 200 to 250 degree's.If you are grilling check meat temp for inside temps of around 150 to 160 degree's.Leave the skin on that helps keep meat moist.
