My buddy did some ribs after our trip here recently and they turned out pretty chewy. Whats the best way to prep hog ribs etc for cooking? Is it better to marinate first or something? Or is that part destined for sausage?
I got my processed portion back from Rick's meats. Man that breakfast sausage and Kielbasa was great. The kids love it too!

Here is what I used to prepare the sausage. If any of you guys can give rib suggestions that would be great. That was weird.
4 - 5 Polish Kielbasa
2 large cans diced tomatoes
1 large can crushed tomatoes
2 small cans diced green chilies
1) slightly poach / brown the sausage
2) put all ingredients into Crock Pot on low and come back 6-8 hours later
3) make some side dishes and ENJOY!
1. Hog ribs are going to be chewier. They are leaner animals than domestic. Three days in mojo will tenderize a hog's shield, if you felt the need to eat one. It will do wonders on ribs.
2. The secret is either a. Sear and then cook to medium rare or b. I you're concerned about the consequences of eating wild pork not cooked to well done I'd suggest parboil and then low and slow (think 200 for 2+ hours).
You want them fall off the bone tender.
First is soak in ice water till there is no more blood cumming out.
Put ribs in foil pan
olive oil
onion
pineapple. Crushed one can including juice.
Cajun seasoning and or crushed red pepper seed if you like hot or fro sweet teriyaki
Combine all in foil pan cover air tight cook on grill slow or in oven for about 3-4 hours or longer the juice will keep the from burning away.
do this with a ham about 6 hours and it will pull apart with two forks make great pulled pork
Here's how I do wild pork ribs:
Like said, they don't have the quality of store bought, so I improvise with them
Marinate in MOJO (or Italian dressing) for 12 hrs at least, 24 preferred.
Take out of marinade, pat dry and apply rub of your choice, liberally.
Fire up gas grill, or charcoal grill to med-high/pre-heat oven to 225deg
Put ribs on, and sear 10 minutes on each side (watch them carefully for flare-ups)
Put them in a baking pan(I get the disposable pans at Winn dixie), add a good few ounces of white wine or apple juice. Wrap tightly in foil and bake till the bone will pull out cleanly
Here's how daddy did them.
Cut to fit in crock pot or slow roaster
Pinch of salt & pepper
Add one bottle of BBQ sauce of your choice
Put on low
Go huntin for day
Eat ribs at dark thirty
They were always damn good
I used IL2H's DADDY's method, crock pot and bottle of sauce of your choice, bbq,teriaki whatever and it was fall off the bone. wild or store bought (mostly storebought shoulder-boston butt for me)
