Personally I think wild turkey is way better than any store bought turkey,maybe cause of all the work that goes into getting one. I do mine alot like iluv2hunt does making them alot like chicken strips. I play around with marinades,with my favorites being Italion dressing,or regular frenchs mustard. I also like coating them with honey batter and fry. The only thing with the honey is dont do the whole thing in honey because it can be a little too much sweet.

Look up a recipe for brining a turkey; in my humble (and admittedly limited) experience I've found that since wild turkey is much leaner than store bought, it has a tendency to dry out.
Brining can make even my mother-in-law's turkey taste good!

Brining is great if doing a whole turkey at one time(frying, baking. smoking, etc...). Matter of fact, I swear by it.
Here's another tip from my brain full of cooking knowledge.... :smartass

Brine turkey for 8 hours

Get your smoker going with some nice light wood like citrus wood, pecan, or hickory. Get your heat balanced around 325deg

Remove bird from brine, rinse off, pat dry. Liberally apply rub of your choice. Try to get some of the rub up under the skin. Shove a big white onion and a few garlic cloves up its butt hole

Take a brown paper grocery bag(double bagged) and spray liberally inside/out with cooking spray like Pam. Place bird in bag,insert temp probe in thigh, roll up open end of bag, and place away from fire for indirect heat. Close lid, go drink some beers, watch a ball game....When the temp probe hits 150ish, remove bag carefully and crank the heat up a bit on the smoker. Let the bird finish cooking to crisp up skin till it reads 165.
Guarantee you thats the best smoked turkey you'll ever eat
