I am not a fan of turkey. I usually don't even eat turkey at Thanksgiving. But there is not much better than fried wild turkey breast.
When you clean the bird, cut the breast in 2 halves. You can fillet each side of the sternum.
Take a half out of freezer, slice into strips. Dip in egg then cracker meal. Fry till done, but not over done. Dip in blue cheese
Also on a decent size bird, you can de-bone enough dark meat for another batch to fry
The bird I killed last year, I boiled and made over a gallon of stock. Just boiled the carcass(after deboning breast/dark meat) in a pot of water with onion, celery, bay leaves, salt/pepper. Strained it and froze the liquid in quart containers. 100x better than any chicken stock you will ever buy

I know this post is old but turkey is just like anything that is famed raised. They spend a lot of money to make him fat and tasty. The animals in the stores and the birds are going to be fatter and more tender which results in a better taste if you cook the two the same exact way. However the crap they feed the birds and animals including the hormones are whats screwing up the kids these days, puberity is way earlier today than it was 25 years ago. The real question should be is wild turkey healthier than store bought and does it taste good. Then my answer would be a hell to the yes. Fried turkey breast strips my favorite not the healthiest way to eat it but healthier than fatty store bought bird cooked the same way.
It'll be the best hormonefree, antibiotic injested, walking around in it's own feces it's whole life, turkey you ever tasted!!!!
Good for making jerky, not near the taste you are used to in a store bought turkey but can be made properly to taste very good same as any wild game.
