I slaughtered cows and pigs for a few years after high school, Id like to video the proper way to market clean a pig in lees than ten minutes and show you guys. The proper equipment helps also. BTW if the one in BH is the "Guess Method" written by Glenn Guess then I dont think it works any faster and definitely no cleaner than my way.

ok i hope you guys can read this. and yes the first one is upside down. if you guys have a easier way of cleanin them please tell me how. i am all ways wanting to learn new things.




if anyone can copy and repost them larger so they can be read please do i suck at this.

I really wish I could tell yall how to do it. Its not that easy and the terminology isnt easily understood. The man that taught me is chain lightning with a spoon knife, he can have a beef skinned. gutted and quartered properly in 30 minutes or so. I was never as fast as him but still faster than any non butchers. If anyone has a pig they would like cleaned I would gladly demonstrate for free. As long as I can pick him up off the ground it can be done in 10 minutes or less. My first day butchering was the day we did the strawberry festival pigs. We knocked them down 3 or 4 at a time and Bruce showed me how he did it, after watching I thought it would be a breeze as he made it look so easy. 20 minutes later he finished mine " so they wouldnt spoil". Ive won many bets at WMA cleaning stations and felt bad as it was similar to taking Brett Favre to a sandlot game.
