Casings are getting expensive. I bought some this past season and paid like $30 for two packages of them. It was enough to do about 60 pounds of sausage
I need to buy a grinder and the rest of supplies to make my own. But the price they charge isn't to bad. I bring them the meat boned out and it's ready for pick up within a week usually.
By the time you buy the seasoning and the casings you have about $.20 a pound in it
Plus they add fat if needed. And the packaging material.(this time they cheeped out on that) But still not to bad when you factor in the time required to make the sausage. Maybe next season I'll start making my own.
It only took us 3 hours fromm whole hogs to sausage. We oder our casings from Ney York. I get the fat from Fussell's in arcadia. This time when I took my steer in I told them to save the fat.
