Neck hell head. I don't eat brains anymore. To much work to get them off the grass. :taz

Well if you like liver venison liver usually is no good if the deer is old say a 2.5. They get a parasite like cattle but our cattle never lived 2 years anyways. If you feed the deer right like lease hunters they should be getting the meds so they wont have parasites. Beef tong is a delicacy.

Venison heart is just like any other good cut of venison, cook it too long and it will be so tough you will not enjoy it (other than venison stew). It doesn't need to be aged like a ham or backstrap. The recipe for heart at our house is simple, wash and trim all the hard and fatty tissue from the top where the plumbing is attached, then begin at the tip and slice it cross grain about 1/4" thick. Slices get larger as you slice. Season to your taste, with or without breading, fry for a minute and a half and it's ready! Just aint big enough for a couple of big eaters. Treefarmer
