I know what a Datil pepper is.
A habenero or scotch bonnet ranges from 150k -300k scovilles.
I doubt you're going to have much heat with one chopped up pepper in 15lbs of meat.

Are you saying 1.5 peppers for 15lbs of meat? I wouldn't think you'd even taste it....

My bad thought that replied back last night... guess It didn't go thru. I meant 1.5 cups chopped dattles. I used 5 dattles last time in the marinade the last time I made jerky.

Treefarmer It is a 60/40 mix of venison/pork with Gander Mountain seasoning in a box.. It is definitely a hit. Gonna have another cooking this weekend. I just took out about 25 pounds of meat tonight.

There's a new Gander Mountain store in Dothan. It appears I'll have to order seasoning, as the store apparently doesn't stock it. Probably just as easy to make an online order and not have to travel up to Dothan.
What size tube do you use? Kit said it contains everything but the meat.
