oh man am I reading the wrong thread, this is making me starvin. best I ever had is a toss up between puerto rican and cuban cooked whole with the skin on. maybe an edge towards the cuban style. they do alot of "pig pickins" in N.C. and it's dam good but not like the cubans

Mmmmmm, pig! Smoked a good many of them with Dad for family gatherings over the years. We have big day every four or five months for us all to get together and we either smoke/roast a hog or bil a big pot of crabs. Usually pork because they're less expensive and plentiful...plus it gives me a reason to go hunting, lol.

Mojo's great, but lately we have been experimenting with the Sportsman's Gold marinades and seasonings and Oh Boy are they Good!!!

You may want to find someome to help you with experience, cooking with fire takes a lot of practice and could be disasterous if not done properly.Nothing sucks worse than cooking for a bunch of people then the foos eithr be burned or raw. Good luck.

Had to look this one up, first time I'd ever heard of it. Looks awesome! Hard to beat a cooker like that for $250!

Several YouTube vids on them in use, just search for "china box pig".
