don't personaly care for mesquite, but if you can get some fruitwood especialy apple and mix it with hickory, oh man watch out.

That box is about the only way ur gonna cook one in the ground around here. Dig down 12 inches in the Black Hammock, and the hole fills with water. It'd be like steamin a pig rather than roasting it.

For me, mesquite is best used when you need a nice hot fire and just a bit of smoke taste, like grilling a good steak. For slow-cooked, smoky stuff like ribs, chicken, whole pig, etc. it's not nearly as good as hickory, maple, pecan, apple, other fruitwoods, etc.
