I love cooking with Mojo!
You didnt say when you needed the cooker......I have one big enough to do a whole pig say up to about 100 lbs or so....if its split into two halves....has two pull out racks so you can baste...separate fire box with damper....cooks real good....made out of 120 gal. propane tank....only problem is it take about 4 guys to move cuz its on a stand and not on a trailer....but I wont be able to help you with it until after July 4th or so....when do you need it?
DaveT gave you good info but I will add...
You will be looking at 8 to 12 hours cook time depending on type of cooker and heat you cook at.See if it comes with a wire basket to hold pig together while cooking or use chicken wire so you can turn the meat as needed. Use a store bought meat thermometer and check inside temp range from 190 to 200 degrees.Good luck!

All good info too......but if you use a cooker with indirect heat and a separate firebox....the turning becomes almost unneeded......also...pretty sure pork is done done done at 170.......but the thermometer is a great idea...I just go til the bones pull free...not that hard really...and if you do it after first week of July, you can use my cooker and I'll even help if you need it....
yes sir you are correct on temp FDA guidelines say low side is 160 but with us selling to the public we cook to the well done rated range, which I should have stated,my oops!
