The fruit will ripen without a frost, just part of the natural process. A good cold spell, not necessarily a frost, can start the ripening of the fruit when they go from green to orange or yellow. I believe it's similar to the process that makes leaves turn colors in the fall.

a bit of a shame to waste em but they make great targets. pull a Gallager on one at 300 yds is not easy, 200 with a good rest all day, they turn to mist.

Fertilizer is key to the sweetness IMO. They sell a citrus/palm fertililzer mix that'll work
