Cleaning an Armadillo

I checked out you tube and they only showed how to catch one. There was one video of some Hispanics cleaning one but they used a hatchet and left the meat in the shell and threw it into a pot with some other veggies. My brother in law had the meat totally removed from the shell.

I am trying to find something that shows some good details as to how to remove the guts and then get the meat outta the shell.

I believe there is a sac of something in them that you need to avoid. never had the pleasure of eating one myself but if they had them in N.H. in the latter 70's I would have. if you find one thats been hit by a car, most of the work is already done. just be sure that sac isn't broken. if you want to limit out on dillers homosassa wma is loaded with them and they are ez pikins.
