There's a good book (can't recall the title) about a guy who made a fortune cutting out cows from the swamps and marshes back in the "cracker" days after the Civil War. They'd round them up a few hundred and drive them down to Tampa, Manatee, Punta Rassa, etc. and sell to the Cubans for gold. Some of my family came down from North Carolina and Alabama after the war and worked some of the drives. They didn't have Thermacells or DEET back then!

Yeah, I think that's it. There's another good book about early 1900s Florida living is "Totch: A Life in the Everglades". And then there's "Last Train To Paradise" about Henry Flagler building the railroad to the Keys, and in doing so building what is now Florida's east coast, including cities like Miami, Palm Beach, West Palm, etc.

I love a good historical novel!

Legal answer? I've NEVER seen in the regs ever that you can take cows of any kind. Don't do it! 😆
