im not 100% sure on the whole drying thing before it gets scored cause ive never got one big enough to score that much

Antlers dont need to dry for the Florida registry but they do for the Boone and Crocket and Pope And Young. Also you dont need the antlers to mount one. You can keep the antlers until the end of the taxidermy process and then put them on at the end.
