got 8 decent fillets in the smoker put them in around 11 so should be ready about 2 . I figured they are about 1/2 to 3/4" think so 3hrs should it. Or am I wrong.

3 hrs is about right if you have a nice low fire at about 200-225 deg. Baste them every once in a while

turned out ok I cooked it a little to long i think. I did not like it but my son has been eating it like candy, so it will never go to waste.
