They last for days on ice so no worries. Search this same sect. and you will find a post i put up that will answer your questions.
thanks i just read your other post but I had allready cleaned a felet them. i did it basically that way but not as pretty or as much meat. not bad for the first time. how long will they last after smoking them.
I'll eat them for 3-4 days if kept cold in the fridge.
Fillets are pretty good fried, too. Remove the skin and make sure your oil is hot (about 350°F) before adding the fish, use your favorite breading/batter method as for any fish, and you'll be pleased!
We did this once for a church fish fry when I lived up in Ft Walton Beach. We had intended to go out on a party boat from Destin on Saturday and have the fish fry Sunday after services. Well, the weather offshore cancelled the party boat trip, so several of us took cast nets and caught about 120 mullet, all around 2 pounds, and spent a couple hours Saturday evening filleting them. We didn't tell anyone what kind of fish it was, and got a lot of compliments. Some of the Yankees thought it was cod or haddock!
I need to get me another cast net and re-learn how to throw it. I haven't done it in well over 10 years. As long as there's mullet you'll never go hungry!
