Removal of Sex Evidence of Deer or Turkey

I would cut the sex evidence off and put in a ziploc bag, in the cooler with meat.
We do something similar with doe tags on my lease. we are required to tag a doe immediately. Tag goes in the ear and when it gets cleaned, I cut the ear off with tag in it and put in baggie in cooler. That stays with it till I get home

just curious. how can they tell if its a doe or buck ear?
